Classic Spaghetti Carbonara

A creamy Italian pasta dish with eggs, cheese, pancetta, and black pepper.

Ingredients:

  • 350g spaghetti
  • 150g pancetta or guanciale, diced
  • 4 large eggs
  • 50g pecorino romano cheese, grated
  • 50g parmesan cheese, grated
  • Freshly ground black pepper
  • Salt, to taste

Instructions:

Bring a large pot of salted water to boil and cook spaghetti according to package instructions until al dente.

While pasta cooks, heat a large skillet over medium heat. Add pancetta and cook until crispy, about 6-8 minutes.

In a bowl, whisk together eggs, grated cheeses, and plenty of black pepper.

Reserve 1/2 cup of pasta water, then drain the pasta.

Working quickly, add hot pasta to the skillet with pancetta, removing from heat.

Pour the egg and cheese mixture over the pasta, tossing continuously until a creamy sauce forms. Add a splash of pasta water if needed to loosen the sauce.

Season with additional black pepper and salt if needed. Serve immediately with extra grated cheese on top.
